A Quick Breakfast That Won’t Break the Bank

Now that the holidays are over, everyone has their “New Year, New Me” goals. Mine are eating more protein and not spending unnecessary money. This easy breakfast sandwich goes hard on both. I can make this for less than $1.00!

Since I don’t have time to sit down and eat a proper breakfast at home before work, I make this in my office kitchen with just a microwave and a toaster. It’s perfect for a quick breakfast before class or work.

Since cooking an egg in the microwave is not ideal, here are a couple of tips:

  • A little butter or oil in the mug will help keep the sticking to a minimum.
  • Don’t overcook the egg. Sometimes, even a few seconds will take your egg from a little raw to rubber. This recipe is based on the times that work best for my microwave. Yours may need more or less time. If you’re having trouble, try dropping your power to 50%.
  • If the egg is coming out too dry, try covering the mug with a small saucer or a damp paper towel.

Ingredients:
  • Egg
  • Frozen sausage patty
  • Favorite bread, such as an English muffin, bagel, sourdough bread, etc.
  • Cheese (optional)
  • Oil or butter for the mug (optional)
Gear:
  • Toaster or toaster oven
  • Microwave
  • Microwavable coffee mug
  • Fork
  • Paper towel
Directions:
PrepToast the bread and grease your mug.
EggBeat the egg and cook for 30 seconds. Remove the mug from the microwave and flip the egg over in the mug.
SausageWrap the sausage in a paper towel and microwave for 40 seconds.
Egg Part DeuxPut the egg back in and cook for an additional 10 seconds or until no longer runny.
AssembleAssemble into a sandwich and enjoy! For an extra kick, add a slice of your favorite cheese.

Pro-Tip: If you want to cook more than one egg, increase the cooking time slightly until the egg is no longer runny.

I’m partial to sausage and English muffins, but leftover cooked bacon or Canadian bacon and whatever bread is available work just as well. Get creative and make it your own!

5-Minute Breakfast Sandwich

Prep time: 3 minutes | Cook time: 2 minutes | Total Time: 5 minutes | Serves 1

Ingredients:

  • Egg
  • Frozen sausage patty
  • Favorite bread, such as an English muffin, bagel, sourdough bread, etc.
  • Cheese (optional)

Directions:

  1. Toast bread.
  2. While the bread is toasting, crack the egg into a microwave-safe mug and whisk with a fork.
  3. Cook egg for 30 seconds (longer if more than one egg is used). Remove from microwave, flip egg over, and set aside.
  4. Wrap the sausage in a paper towel; cook for 40 seconds.
  5. Remove the sausage and cook the egg for another 10-15 seconds, until no longer runny.
  6. Remove the bread from the toaster and layer the egg and sausage between the slices.
